These cookies are a lovely little treat. With just a hint of almond flavour from the almond extract and the mild sweetness of the coconut sugar they are the perfect Christmas cookie.
Coconut Sugar Cookies
These cookies are a delightful treat. With a hint of almond, mild sweetness of the coconut sugar and topped with a gogi berry they are the perfect Christmas cookie.
- 1/2 cup coconut oil
- 3/4 cups coconut sugar
- 1 tsp vanilla extract
- 1/4 tsp almond extract
- 1 tsp baking soda
- 1/4 tsp sea salt
- 3 Tbsp coconut milk
- 2 cups organic flour
- 24 dried Gogi berries
Using a hand mixer cream the coconut oil and sugar.
Add vanilla, almond extract, baling soda and sea salt. Mix again.
Add 1 cup of flour and mix, then add the second cup of flour and mix again until dough is sticky enough to form balls but not wet.
Optional: Roll balls in coconut sugar.
Press your thumb, or a fork, gently on top of the cookie to spread out a little.
Optional: Place one goji berry on top of every cookie
Bake for 12 minutes.
Allow to cool on the pan for 10 minutes then move to a rack to cool completely.
These cookies may be a little eon the dry side depending on the kind of flour you use. Add 1 tablespoon of coconut milk at a time until you get the desired consistency for the dough.
