Peanut Butter Chocolate Chip Cookies

  • 2 flax eggs. 3 tbsp. ground flax + 6 tbsp. water. Stir and let sit until egg-like consistency.
  • 1 cup Earth's Balance Vegan Butter
  • 1 1/2 cups sugar
  • 1 tbsp. vanilla extract
  • 1/2 cup peanut butter
  • 1 tbsp baking soda
  • 1/2 tsp sea salt
  • 3 1/2 cups organic, whole wheat flour
  • 1 cup small vegan chocolate chips


  1. Preheat oven to 350 F.

  2. Place vegan butter, sugar, vanilla and flax egg in a large bowl.

  3. Use a hand mixer to mix until creamy.
  4. Add peanut butter and mixwith hand mixer until well combined.

  5. Add baking soda and salt. Mix again.

  6. Add flour one cup at a time and mix with hand mixer.

  7. Add chocolate chips and stir in using a spatual or hands until thoroughly distributed.

  8. Roll into balls, about 1 tbsp. per ball, and place on a parchment lined baking sheet.

  9. Bake for 10 minutes.

  10. Let the cookies cool and firm up on the baking sheet before moving them.
