Peanut Butter Chocolate Chip Cookies
- 2 flax eggs. 3 tbsp. ground flax + 6 tbsp. water. Stir and let sit until egg-like consistency.
- 1 cup Earth's Balance Vegan Butter
- 1 1/2 cups sugar
- 1 tbsp. vanilla extract
- 1/2 cup peanut butter
- 1 tbsp baking soda
- 1/2 tsp sea salt
- 3 1/2 cups organic, whole wheat flour
- 1 cup small vegan chocolate chips
Preheat oven to 350 F.
Place vegan butter, sugar, vanilla and flax egg in a large bowl.
Use a hand mixer to mix until creamy.
Add peanut butter and mixwith hand mixer until well combined.
Add baking soda and salt. Mix again.
Add flour one cup at a time and mix with hand mixer.
Add chocolate chips and stir in using a spatual or hands until thoroughly distributed.
Roll into balls, about 1 tbsp. per ball, and place on a parchment lined baking sheet.
Bake for 10 minutes.
Let the cookies cool and firm up on the baking sheet before moving them.
