Lime Berry Sparkler

This refreshing non-alcoholic mocktail uses fresh fruit and basil paired with sparkling grapefruit water to make the perfect brunch, or cocktail party, drink. You can turn this into a cocktail by adding sparkling wine, champagne or liqueur of your choice.

Serve with a dish such as the Cashew Cinnamon Pear French Toast for a delightful brunch.

 

Lime Berry Sparkler

Ingredients

  • 1 cup fresh or frozen blueberries
  • 8 fresh basil leaves
  • 1 cups lime juice
  • 1 cup cucumber juice
  • 1/2 cup sugar
  • 1 litre grapefruit flavoured sparkling water
  • 8 wedges lime
  • Ice

Instructions

  1. Add the blueberries and basil to a large pitcher and crush them using a muddler or masher.
  2. Add the sugar. NOTE: You may need to adjust the sugar depending on how sweet or tart you want the beverage. 

  3. Add the lime juice and sparkling water.
  4. When ready to serve pour over ice and garnish with lime wedges and basil leaves.
