Preheat oven to 400 degrees F.
Use a fork to prick the potatoes and/or slice through pototes to help potatoes cook faster.
Place in baking pan and then in oven to cook until tender (about 60 minutes).
When cool, remove peels, place in a mixing bowl and mash.
Remove from heat and cool.
Optional: Top with 1 tsp organic jam or a drizzle of maple syrup.
These squares, or bars, keep well in the fridge for a few days or freezer for months. Serve immediately when they are nice and warm or allow to cool and freeze for later. Then pull one out, warm it up and enjoy.
