Sweet Potato Bisque

This soup is rich in flavour and has a silky texture when blended in a high-speed blender. Sweet potatoes are a fall vegetable that are rich in antioxidants and fibre. I also love using spices like coriander, which has been shown to prevent diabetes, reduce inflammation and cholesterol.

Ingredients

  • 1 large sweet potato, peeled and diced
  • 2 cups carrots, peeled and diced
  • 2 cups vegetable broth
  • 1 cup vegetable broth
  • 1 clove garlic, minced
  • ½ tsp sea salt
  • 1 tbsp maple syrup
  • ¼ tsp curry powder
  • ½ tsp coriander powder
  • ¼ tsp ground ginger

Instructions

  1. Steam sweet potatoes and carrots until soft and place in blender or foods processor.
  2. Add remaining ingredients to blender or food processor.
  3. Blend until smooth.
