Black Bean Fajitas

Ingredients

Ingredients For Fajitas

  • 1 small onion, diced
  • 1 yellow pepper, diced
  • 1 can black beans, 16 oz
  • 1 tsp. chili powder
  • ½ tsp. sea salt
  • ½ tsp. ground cumin
  • ½ tsp. fresh ground pepper
  • 1 tomato, diced
  • 4 large brown rice tortillas

Ingredients For Toppings

  • 1 avocado, mashed with 1 tbsp. lemon juice. Set aside
  • 1 tomato diced
  • 1-2 cups lettuce chopped
  • Daiya shredded cheese optional

Instructions

  1. Preheat oven to 300 degrees.
  2. Coat pan with coconut oil.
  3. Add onion and pepper. Cook until onions are translucent (about 2 minutes)
  4. Add black beans and spices. Cook for about 5 minutes or until warm (or until beans are cooked through). Stir often.
  5. Heat tortillas on a cookie sheet in oven for about 2 minutes.

  6. Divide toppings and bean mix evenly among tortillas.
  7. Serve immediately.
