These cookies are a delightful treat. With a hint of almond, mild sweetness of the coconut sugar and topped with a gogi berry they are the perfect Christmas cookie.
Optional: Roll balls in coconut sugar.
Press your thumb, or a fork, gently on top of the cookie to spread out a little.
Optional: Place one goji berry on top of every cookie
Allow to cool on the pan for 10 minutes then move to a rack to cool completely.
These cookies may be a little eon the dry side depending on the kind of flour you use. Add 1 tablespoon of coconut milk at a time until you get the desired consistency for the dough.
