Yep! You read that right… vegan shortbread! It is possible and they are delicious! These cookies are light and melt in your mouth. If you love shortbread but not all the dairy butter, give these ones a try!
Vegan Shortbread Cookies
- 2 cups coconut oil
- 1 cup icing sugar
- 0.5 cup arrowroot powder
- 3.5 cups organic unbleached flour
Preheat oven to 350 degrees F.
Place coconut oils and sugar in bowl.
Using a hand mixer cream coconut oil and sugar.
Add arrowroot powder and mix again until smooth.
Add flour one cup at a time and mix until dough forms.
Roll dough into balls and place about 3 minutes apart on a parchment lined cookie sheet.
Sprinkle with sugar.
Cook for 10 minutes or until sides are lightly browned.
Allow to cool fr about 10 minutes on the cookie sheet then transfer to the counter or cooling rack to cool completely.
