Coconut Sugar Cookies

These cookies are a lovely little treat. With just a hint of almond flavour from the almond extract and the mild sweetness of the coconut sugar they are the perfect Christmas cookie.

These cookies are a delightful treat. With a hint of almond, mild sweetness of the coconut sugar and topped with a gogi berry they are the perfect Christmas cookie.

Ingredients

  • 1/2 cup coconut oil
  • 3/4 cups coconut sugar
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract
  • 1 tsp baking soda
  • 1/4 tsp sea salt
  • 3 Tbsp coconut milk
  • 2 cups organic flour
  • 24 dried Gogi berries

Instructions

  1. Using a hand mixer cream the coconut oil and sugar.
  2. Add vanilla, almond extract, baling soda and sea salt. Mix again.
  3. Add 1 cup of flour and mix, then add the second cup of flour and mix again until dough is sticky enough to form balls but not wet.

    Optional: Roll balls in coconut sugar. 

  4. Press your thumb, or a fork, gently on top of the cookie to spread out a little. 

  5. Optional: Place one goji berry on top of every cookie

  6. Bake for 12 minutes.
  7. Allow to cool on the pan for 10 minutes then move to a rack to cool completely. 

Recipe Notes

These cookies may be a little eon the dry side depending on the kind of flour you use. Add 1 tablespoon of coconut milk at a time until you get the desired consistency for the dough.
