Ingredients For Fajitas
- 1 small onion, diced
- 1 yellow pepper, diced
- 1 can black beans, 16 oz
- 1 tsp. chili powder
- ½ tsp. sea salt
- ½ tsp. ground cumin
- ½ tsp. fresh ground pepper
- 1 tomato, diced
- 4 large brown rice tortillas
Ingredients For Toppings
- 1 avocado, mashed with 1 tbsp. lemon juice. Set aside
- 1 tomato diced
- 1-2 cups lettuce chopped
- Daiya shredded cheese optional
Instructions

Preheat oven to 300 degrees.

Coat pan with coconut oil.

Add onion and pepper. Cook until onions are translucent (about 2 minutes)

Add black beans and spices. Cook for about 5 minutes or until warm (or until beans are cooked through). Stir often.

Heat tortillas on a cookie sheet in oven for about 2 minutes.

Divide toppings and bean mix evenly among tortillas.
